Every Black Apple Luxury Wagyu carcass is scored at the rib in line with agreed practice, and certified independently. The nature of the breed as a draught animal means that the front develops the intramuscular fat first which can sometimes mean slightly higher scores at the front than on the cuts at the rear.
We know that there is plenty of lower-quality and inconsistently graded Wagyu on the UK market. It can even have a marbling score that’s lower than traditional beef breeds such as Angus, Shorthorn or Hereford. Choose a lower marbling score and you’re far from assured of a truly luscious dish and a luxury Wagyu experience.

At Black Apple we’ve harnessed genetic and genomic knowledge to refine the distribution of the intramuscular fat across the carcass without diluting the 100% Japanese Wagyu heritage. We spared no expense in seeking out the finest genetics from the top 5% of the revered Japanese bloodlines as the foundation for our Yorkshire herd.
Like the great winemakers of France who attribute much to “le terroir”, the quiet East Yorkshire fields where Romans and Vikings once passed are blessed with sea breezes and lush pastures, and are an excellent environment for our Wagyu herd to live and thrive. The Drewton Estate has farming roots that delve deep into the fertile soils of the Yorkshire Wolds as far back as the Doomsday Book and is the base for our UK Luxury Wagyu herd.
We’d love to have a story about how we create beef magic by sprinkling our herd with pixie dust, or playing them Mozart and giving them access to a bovine sauna, but it wouldn’t be true. What is true is the expert care and attention we give our Wagyu herd.
Like those great wines, each “year’s product” will have nuanced variations in taste that is influenced by how soon the herd returns to the fresh pastures and the herd’s diet which is monitored and supplemented with foodstuffs.
